Thanksgiving Smoked “Ready to Cook” Hams
It really pays to be informed and read the label on packages before you proceed. I almost made a big mistake on the Hams this Thanksgiving!! I smoke tested a “Fully Cooked” Butt Half Ham last week to prepare for Thanksgiving and it turned out great. Unfortunately the Hams that I bought for Turkey day were not “Fully Cooked”. The Hickory Smoked Butt Portion Hams were “Ready to Cook” … Big difference in how you prepare them.
Last week I paid $2.34 per pound for a “Fully Cooked” Hickory Smoked Butt Half Ham versus the $1.59 per pound of the “Ready to Cook” Hickory Smoked Butt Portion Ham. I felt great saving 75¢ a pound … What I didn’t realize at the store is that I read what I wanted to see on the label and not what the label actually said!

Smoked Pork Sirloin Tip Roast
Picked up some nice Pork Sirloin Tip Roasts at Costco. Each weighed in at almost 3 lbs. Rubbed one of the Sirloin Tip Roasts with Annie’s Roasted Garlic Extra Virgin Olive Oil for the glue and a liberal amount of Plowboys BBQ Bovine Bold. Wrapped the roast in plastic wrap and placed it overnight in the fridge. This was my inaugural use of the Bovine Bold Rub and I was anxious to taste the results.
Hickory Smoked Plowboys BBQ Yardbird Rubbed Half Chicken
Costco carries some big fresh Foster Farms Chickens which are too much for the two of us so I’ve started cutting the chickens in half. Here’s a 2¼ lb Chicken Half which is perfect. Rubbed the Chicken On/Under the skin with Annie’s Roasted Garlic EVOO for the glue and Plowboys BBQ Yardbird Rub. Wrapped the Yardbird in plastic wrap and rested it in the fridge for 3 hours to allow the rub to work it’s magic.
Yoshida Marinaded Hickory Smoked Chicken Thighs
Marinaded Fresh Foster Farms Chicken Thighs overnight with Mr Yoshida’s Marinade & Cooking Sauce. I like to use the marinade on Chicken and Pork. Works really great with Pork Chops and gives you that great Teriyaki flavor. Let the marinaded chicken thighs drain while preheating the MAK 2 Star Wood Pellet BBQ Smoker-Grill to 325ºF using Hickory wood BBQ pellets.
Smoking A Fully Cooked Butt Half Ham
My contribution to our family Thanksgiving feast this year is Ham. For years I have always just reheated fully cooked Hickory Smoked Hams in the oven or an 18-Qt Roaster Oven at 350ºF for 15-20 minutes per pound. The Hams turned out OK but often were dry. After reading Forum posts on smoking a Ham on a wood pellet smoker-grill I decided to practice to see the results for myself. The general consensus is that Spiral cut Hams tend to dry out … You wouldn’t believe how hard it was to find an old fashioned Smoked Ham that wasn’t spiral cut! Used an 11.7lb ready to eat Hickory Smoked Butt Half Ham.
