What better way of starting the New Year, 2013, than Hickory Smoking a couple of Tri-Tip Roasts on my MAK 2 Star Wood Pellet BBQ Smoker-Grill!?  Like everything else these days the price of Tri-Tip roasts remain high.  Stores like Costco, Sam’s Club, and Cash & Carry still have reasonably priced meat, poultry, and seafood.  Started with Costco U.S.D.A. Christmas Hams & Pulled Pork

This year’s Christmas dinner consisted of Pulled Pork for us and Hams for our friends.  There’s nothing wrong with a Turkey dinner with all the trimmings but this year I asked my Daughter-In-Law what she wanted and she immediately said “Pulled Pork” … No problem, right up my alley!  Our friends wanted Hams for their family Christmas dinner and asked if I would be kind enough to smoke some … No problem!

Apple Smoked Top Sirloin Petite Boneless Roast

If the rising prices of traditional cuts of Beef are preventing you from enjoying some red meat then check around your local grocery store and/or Butcher and pick up some of those tougher or lesser known cuts.  Using a low-and-slow cooking method will make any cut of Beef delectable!  Following my own advice, I picked up a 2½ lb Top Sirloin Petite Boneless Roast at my local Savemart grocery store for $5 a pound.  Rubbed the roast with Annie’s Roasted Garlic EVOO and Smokin’ Pete’s Roast Rub Seasoning.  Wrapped in plastic and refrigerated for 4 hours. PTG Baked Marinaded Center Cut Pork Chops

For my second test of my new Portable Traeger Grill (PTG) I chose to test it’s performance at a temperature of 350ºF.  Working on developing a technique to cook for two rather than the four that I’ve been cooking for … My wife, myself, the refrigerator, and the freezer!!

Lawry’s Rotisserie Seasoning Blend Chicken Breast on PTG

Visited Sam’s Club last week and found Lawry’s NEW Rotisserie Chicken Seasoning Blend as featured on Sam’s Club Rotisserie Chickens.  Can’t go wrong with Lawry’s – Right!!  Love their Seasoned and Garlic Salts.  I knew I would have to try some of this …  Rubbed a huge chicken breast on and under the skin with Annie’s Roasted Garlic Extra Virgin Olive Oil and applied a liberal amount of the new Lawry’s Rotisserie Chicken Seasoning Blend.  Rested the breast in the fridge for 4 hours.
