GMG Davy Crockett Smoked Chicken Half
The Green Mountain Grill Davy Crockett continues to surprise me with its wonderful outputs and its versatility/capability to output virtually limitless types of foods. We’re tending to eat more poultry these days in these times of rising prices. Half a Chicken comfortably feeds the two of us for less than $3 if you buy your chicken whole and cut it in half yourself. You’d be amazed at how much you can save if you portion your own fowl. Pick out a nice 4-5 lb whole chicken, cut it in half, smoke/cook the half which provides a nice quarter and breast. My better half prefers the dark meat of the quarter and I prefer the white meat of the breast … perfect solution at ~$1.50 per portion. A $6 to $8 whole Chicken will easily feed a family of 4 or more.
GMG Davy Crockett Smoked Meatloaf
Many people rate Meatloaf, Mashed Potatoes and Gravy accompanied with a side of Corn as one of the ultimate if not their favorite Comfort Food of all time. Once you’ve smoked a meatloaf in a Wood Pellet BBQ Smoker-Grill you’ll never use your oven again. Hickory smoking a meatloaf adds that WOW flavor profile that your family and guests will rave about.
I recently added the Green Mountain Grill (GMG) Davy Crockett (DC) PortableTailgater Pellet Grill to my stable. My initial intention was to use the DC only on the road but it has turned out perfect for home use when cooking for 2 and/or a small family. I love my MAK 2 Star Wood Pellet BBQ Smoker-Grill and still use it often for larger cooks or certain recipes but the Davy Crockett is beginning to be used more and more.
Ribeye Boneless Roast
Costco only cells Choice and Prime UDSA grades of Beef and both are very competitively priced year round. Chose a nice 10 lb Choice Beef Ribeye Boneless Roast to serve this year for our Christmas dinner. Although “Prime” normally refers to a ‘grade’ of meat most people call this a “Prime Rib”. When I asked the Butcher what the difference is between a ‘Ribeye’ and a ‘Rib Roast’ he informed me that one has a bone and the other has the bone removed. You normally pay more per pound for a Ribeye because you’re not paying for the bone. The Ribeye Roast lends itself beautifully to Low-and-Slow smoking/roasting. Take the Roast to 130º – 135ºF for Medium Rare – Center is very pink, and the roast is slightly brown toward the exterior.
Smoked Boneless Pork Butt
Don’t let the Pulled Pork purists deter you from foiling your Boneless Pork Butts when cooking Pulled Pork. Some will tell you that you must smoke it low-and-slow for 15 to 24+ hours but I’m here to tell you that you can start at 8:30 am and enjoying scrumptious Pulled Pork at 5 pm for dinner.
Smoked Shank Portion Ham
My contribution to this year’s Thanksgiving celebration at my Son’s house was Ham. He’s providing a 30 lb Gobbler!! I can’t wait to see that beast! … As in the past I have found that Traditional Bone-In Hams are the only way to go in the MAK 2 Star Wood Pellet BBQ Smoker-Grill. Spiral cut hams are great but they tend to dry out.
